What's On the Menu

This week I had pretty good luck with all the recipes I tried (thanks to some of you too!).  So, I thought I'd post what we had for dinner this week.  Click on the green link for the recipe!

Monday: Stir Fry. (Thanks Brooke!) This was really good.  I doubled the sauce recipe (except for the red pepper). The only thing I would do different is add a little less red pepper. I like spicy but I think a little less would be perfect. I also added snap peas. Delicious!

Tuesday: We had grilled chicken using the McCormick Balsamic Citrus Grillmates. I've had this many times before and this is a really yummy marinade! So good I made Ronnie grill outside in the cold...

Wednesday: Potato Soup. Ronnie was a bit skeptical when I told him I was going to make potato soup, he is not a big fan. But....he thought it was great and so did I. We didn't have any bacon so I used turkey bacon. Turkey bacon doesn't provide much drippings so I used some olive oil to saute the onion and garlic. I also used Yukon Gold Potatoes because I didn't realize they were different than baking potatoes! You'd think I'd know since I lived in Idaho for 3 years :) It was still good though. I would try using regular baking potatoes next time.

Thursday: Leftovers!

Friday: Spinach and Broccoli Pizza with Breadsticks.
This was really good....I do love me some broccoli! I didn't have a pizza stone so I cooked it on a cookie sheet. I might borrow my mom's pizza stone to try next time to see if it's any different. The breadsticks were good too. They are supposed to be similar to the Olive Garden breadsticks. The only thing I would change is that I tried to cook them both in the oven at the same time but the breadsticks got to brown on the bottom. Next time I'd cook them separate. I also put half of the breadstick dough in the freezer to use for next time...since there are only two of us.

I will definitely be making these recipes again. What did you have for dinner?

Recipe Request

One of my New Year's resolutions is to cook at least three times a week. This may not sound like much but I'm horrible at actually making dinner. It's usually because I don't know what to make that is fast and easy. "Canned soup, hunny?" That gets old quick. Soooo....I'm requesting good recipes! Maybe you have a recipe or a blog that has lots of yummy recipes?! Whatever floats your boat. In return, my husband will thank you!

Ringing in the New Year

Happy 2011!

What better way to ring in the New Year than going to a wedding of two lovely people?!

Did I mention it snowed 14 inches here last week? Did I also mention that it hasn't snowed that much since 1989...and that it really isn't supposed to snow here...??

Well it's true. But thankfully we started the New Year right back at 60 degrees and pretty much all the snow is melted...Thank you 2011! :)


Now I'm off to set some goals.... like going to the gym (that I'm a member of) that is 20 feet behind my house...
