A Special Weekend

This past Sunday we had an apostle from our church come to our stake and speak to us. We were also lucky enough to eat lunch with him afterwards. It was definitely a special experience!!

Also, I thought I'd put a couple pics of my garden up.

Below we have zucchini, tomato, basil, verbena  and our lemon tree.

Here we have our blueberry bushes, 2 tomato plants, 4 green pepper,

2 jalapeno, lettuce, spinach and radishes..and some flowers.

Hopefully this year brings some produce :)

LEMON!

So the day has come that we could finally pick one of our lemons...woot woot.  We had my dad over for Sunday dinner today. Perfect time to use our freshly picked lemon.

 First I used the lemon zest for this yummy pasta dish. One of my favorites. I could eat this all day long. It paired nicely with the grilled chichen we had. I got this recipe out of my red and white cookbook. I tried to find a link but I couldn't so I've typed it out at the  bottom of this post.

For desert I made a Creamy Lemon Pie which used the lemon juice. This was probably the easiest desert I've ever made. The filler is 3 ingredients! I used cool whip on top but you can also use your own whipped cream.

Here is the

Lemon Cream-Sauced Pasta with Asparagus and Squash Recipe

8 ounces dried mafalda or rotini

2 cups asparagus cut into 2-inch peices

8 baby sunburst squash and/or pattypan squash halved, or one medium zucchini cut into peices

2 cloves garlic, minced

1 tablespoon butter

1/2 cup whipping cream

2 teaspoons finely shredded lemon peel

1. Cook the pasta according to the package directions. Drain. Keep warm.

2. Meanwhile, in a large skillet cook asparagus, squash and garlic in hot butter for 2 to 3 minutes or until vegetables are crisp-tender, stirring frequently. Remove vegetables from skillet with a slotted spoon; add to pasta.

3. Combine whipping cream and lemon peel in a skillet; bring to boiling. Boil for 2 to 3 minutes or until reduced to 1/3 cup. To serve, pour cream mixture over pasta mixture; stir gently to coat.

Easter Weekend

This weekend was beautiful. My mom and I started out the Easter weekend by going to the Norfolk Botanical Gardens. It was so nice to go. I had been wanting to go to the gardens to see the azaleas and spring flowers for a long time now so I'm glad we finally got to go.

Just Another Weekend

It has been so beautiful lately! On Saturday, it was so nice. We decided to go the Wildlife Refuge and take a walk around. When we got there it was all cloudy and windy...but we still spent some time walking around outside. Of course, by the time we got home it was all sunny again!

 There were some driftwood stacked up and we decided to take a 

driftwood photo.

 I guess this is were all those helium balloons go....

Well today I'm 28. Scary. I feel like time is whizzing by and I'm still standing in the same place! Nothing a good ol' cherry coke can't fix! :)

Today, I decided to do a little project. It always makes you feel a little accomplished. I have a good amount of jewelry so I thought it would be wise to make something that would ease the burden on my poor jewelry box. I just made something super easy and cheap and I didn't want to paint or buy a lot of materials. To start with, I had an old cork board. I went to the fabric store and purchased some linen and some furniture tacks. I basically just wrapped the fabric on the cork board and used a little hot glue and some small nails to secure it on the back. I took some thin twine for the earrings to hang and used the furniture tacks for hanging the other jewelry.

Voila! Super easy! And its nice to have some of your jewelry out so you remember to wear it. Now I just have to get Ronnie to help me hang it :).

Blue Ridge Parkway

Hi everyone! It's been a while since I blogged last. Lets face it blogging isn't my strong suit.

Last week, I went with Ronnie to Roanoke, VA. He had a CLE class. Before his class, we took a little drive on the Blue Ridge Parkway. It's not as beautiful as it is in other seasons but its still nice to take a pretty drive.

 And by the way, Happy Groundhog's Day....6 more weeks of winter. As long as winter continues to be the same, I'm okay with that! It's been in the 60s and even the 70s lately and I'm okay with that!
